Sundays are for sleeping in, cuddling your loved one, enjoying your day off from duties and work. And Sundays are for pancakes.
After a week full of sticking to your meal plan, working out, managing your daily tasks, you just want to relax and indulge today. But this doesn´t to mean that it can´t be healthy.
If you are craving something sweet and filling while you also may wan´t or have to stay away from dairy, I´ve got you covered. Delicious dairy-free vegan pancakes.
1 1/2 ripe bananas
1 cup of oats
1/2 cup of any non-dairy milk of your choice
1/2 tablespoon of cinnamon
slightly frozen raspberries
a pinch of cinnamon
It helps to blend the oats into a fine flour before adding the bananas and milk. Add the cinnamon last and blend one more time.
Keep in mind to have the pan on a low to medium heat, otherwise you might burn the pancakes before they are cooked through.
Flip them if you can see the batter bubbling up a bit.
While having the pancakes in the pan let your raspberries or any fruit of your choice defrost a bit. Crush some walnuts and put them on the side.
When your pancakes are ready put them on a nice plate. I like to “build” a little pancake tower with them. Add your fruits and walnuts, sprinkle some cinnamon on top of them and done.
